I have many lovely memories of making rocky road in the kitchen of the home I grew up in, and this sweet treat has never lost its appeal.
My favourite fillings are raisins and apricots or pretzels and marshmallows, but you can use whatever you’d like!
A slab of rocky road won’t even last 48 hours in mine and my partner’s house. We both take it in turns to binge on it.

Equipment
- 20 cm square tin
- Cling film
- Heatproof bowl
- Mixing bowl
- Saucepan
Ingredients
- 250 g vegan-friendly digestive biscuits (gluten-free if needed)
- 300 g plant-based chocolate (any dark:‘milk’ ratio)
- 150 g golden syrup
- 100 g plant-based butter [Flora Original]
- Up to 250 g extra fillings
Extra fillings suggestions
- Raisins
- Dried apricots, roughly chopped
- Plant-based marshmallows, roughly chopped
- Pretzels, roughly chopped
- Nuts (any), roughly chopped
- Vegan-friendly sweets, roughly chopped
- Honeycomb, roughly chopped
Instructions
- Line a 20 cm square tin with clingfilm, leaving extra clingfilm hanging over the sides.
- Put the biscuits into a large mixing bowl, then bash them into pieces with a rolling pin or similar heavy object.
- Measure the chocolate, golden syrup, and butter into a heatproof bowl, then melt this over a pan of simmering water, stirring frequently.
- Meanwhile, prepare the extra fillings.
- Place the crushed biscuits and extra fillings into a large mixing bowl.
- Once fully melted and combined, pour the chocolate mixture into the bowl with biscuit mix, then stir in until all coated.
- Spoon the mixture out into the prepared tin, then leave to cool and place in the fridge for at least 2 hours to set.
- Dust with icing sugar (optional), lift out of the tin using the overhanging cling film, and then remove the plastic and cut into servings of desired size.
