Rocky Road [Vegan]

The ease of this no-bake fridge cake does nothing to remove from its crunchy, sweet delectability, and in fact makes it taste even better!

I have many lovely memories of making rocky road in the kitchen of the home I grew up in, and this sweet treat has never lost its appeal.

My favourite fillings are raisins and apricots or pretzels and marshmallows, but you can use whatever you’d like!

A slab of rocky road won’t even last 48 hours in mine and my partner’s house. We both take it in turns to binge on it.

Equipment

  • 20 cm square tin
  • Cling film
  • Heatproof bowl
  • Mixing bowl
  • Saucepan

Ingredients

  • 250 g vegan-friendly digestive biscuits (gluten-free if needed)
  • 300 g plant-based chocolate (any dark:‘milk’ ratio)
  • 150 g golden syrup
  • 100 g plant-based butter [Flora Original]
  • Up to 250 g extra fillings

Extra fillings suggestions

  • Raisins
  • Dried apricots, roughly chopped
  • Plant-based marshmallows, roughly chopped
  • Pretzels, roughly chopped
  • Nuts (any), roughly chopped
  • Vegan-friendly sweets, roughly chopped
  • Honeycomb, roughly chopped

Instructions

  • Line a 20 cm square tin with clingfilm, leaving extra clingfilm hanging over the sides.
  • Put the biscuits into a large mixing bowl, then bash them into pieces with a rolling pin or similar heavy object.
  • Measure the chocolate, golden syrup, and butter into a heatproof bowl, then melt this over a pan of simmering water, stirring frequently.
  • Meanwhile, prepare the extra fillings.
  • Place the crushed biscuits and extra fillings into a large mixing bowl.
  • Once fully melted and combined, pour the chocolate mixture into the bowl with biscuit mix, then stir in until all coated.
  • Spoon the mixture out into the prepared tin, then leave to cool and place in the fridge for at least 2 hours to set.
  • Dust with icing sugar (optional), lift out of the tin using the overhanging cling film, and then remove the plastic and cut into servings of desired size.
